Beer of the Week 78 - 7/20/2011: Cantillon Iris (Vintage 2007)
A really unique offering from the absolute best lambic and gueuze producer in the world - in my opinion.  This one is different from a regular lambic, which is 100% dry hopped.  Iris has 50% dry hops added and 50% fresh hops added giving it a much hoppier taste and aroma than it’s lambic counterparts.  It is aged for two years in oak barrels undergoing spontaneous fermentation - check out the process online…its pretty cool and extremely authentic.
